Baked oatmeal is one of those make-ahead breakfast meals that’s so versatile. I decided to experiment with making peanut butter and jelly baked oatmeal and was pleasantly surprised by how well it turned out! The “jelly” is made with frozen fruit rather than using jelly or jam from a jar, but I promise you will still enjoy the sweetness that you get in regular PB&J. If you’re a fan of PB&J sandwiches, you’ll want to try this version of baked oatmeal.
Step One: Mix the Wet Ingredients
The first step to making baked oatmeal is mixing the wet ingredients in a large bowl. For this recipe that includes:
- Peanut butter
- Maple syrup
- Unsweetened almond milk (any other unsweetened non-dairy milk or regular milk works too)
The eggs hold everything together so the finished product has a firmer more cake-like texture than oatmeal you would cook on the stove.
The peanut butter is an obvious essential ingredient. However, you can use any other nut butter as well if that’s what you have.
I like using maple syrup instead of granulated sugar as the sweetener because it has a richer flavor.
You’ll also want to add a little unsweetened almond milk so that the oat mixture isn’t too dry.
Step Two: Add the Dry Ingredients
I like using one bowl whenever possible to minimize cleanup so I add the dry ingredients one by one and mix as I go. Baked oatmeal is one of those forgiving baking recipes where it’s fine to do this. Your dry ingredients will include:
- Baking powder
Be sure that you use old-fashioned rolled oats. Quick-cooking oats may become mushy and steel-cut oats will not cook enough.
Step Three: Make the “Jelly” and Assemble the Peanut Butter and Jelly Baked Oatmeal
The jelly part of the baked oatmeal is made using frozen fruit. I used frozen mixed berries, but you can also use frozen peaches, cherries, strawberries, raspberries, or blueberries. As the oatmeal bakes, the fruit will cook down into a more jelly-like consistency, producing a “jelly” layer on the bottom.
To assemble the baked oatmeal, evenly cover the bottom of your baking dish with your frozen fruit. Then spread the oatmeal mixture evenly over the fruit. Pop the baking dish in the oven and 35 minutes later you have a delicious breakfast that you can enjoy immediately or save for a quick weekday morning meal.

Peanut Butter and Jelly Baked Oatmeal
- 2 cups old-fashioned rolled oats
- 2 cups frozen mixed berries
- 2 eggs
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- Preheat the oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray.
- In a large bowl, whisk together the eggs, unsweetened almond milk, peanut butter, and vanilla extract,
- Add the oats, cinnamon, baking powder, and salt to the wet ingredients. Stir to combine everything.
- Spread the berries evenly on the bottom of the baking dish. Spread the oat mixture evenly over the berries. Bake for 35 minutes, until the edges are golden brown.
