Slow cooker soups are one of the easiest meals you can make. You add all the ingredients to the slow cooker, turn it on, and 8 hours later you have homemade soup! Split pea soup is perfect for the slow cooker because it becomes creamier the longer you cook it. Slow cooker meals are also great for meal prepping. Make this slow cooker split pea soup on the weekend and heat it up for work lunches or weeknight dinners.

split pea soup ingredients

Dried split peas are both budget-friendly and nutritious. You can buy a one-pound bag for $1-2 dollars and make a filling meal packed with fiber and protein. Split peas are also a good source of vitamins and mineral including folate, iron, manganese, phosphorus, and copper.

The only real prep for this recipe is chopping the onion, carrots, and celery. You can do this right before you put everything into the slow cooker or do it the night before and then store the chopped vegetables in an airtight container in the fridge. Start the slow cooker in the morning so that it’s done right before dinnertime.

To make this soup vegetarian, simply use vegetable stock rather than chicken broth.

Storing & Reheating Leftover Split Pea Soup

Store leftovers in an airtight container in the fridge for up to 5 days. Before you reheat it, add a few tablespoons of water and mix to combine. Then reheat it in the microwave or on the stovetop. Split pea soup does not make the prettiest leftover before you reheat it, but it will look more like soup after it’s been heated. Add some red pepper flakes if you want a little spice.
