Ingredients

  • 2.5 cups old-fashioned rolled oats
  • 2 eggs
  • 1.5 cups unsweetened almond milk
  • 1/2 cup raisins
  • 1/2 cup brown sugar
  • 2 tablespoons avocado oil (can also use coconut oil)
  • 2 tsps cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, almond milk, vanilla extract, and oil.
  • Add the oats, brown sugar, raisins, cinnamon, baking powder, and salt to the wet ingredients and mix until combined.
  • Pour the batter into the baking dish and bake for 35 minutes, until the edges are golden brown.
