Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups frozen mixed berries
  • 2 eggs
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray.
  • In a large bowl, whisk together the eggs, unsweetened almond milk, peanut butter, and vanilla extract,
  • Add the oats, cinnamon, baking powder, and salt to the wet ingredients. Stir to combine everything.
  • Spread the berries evenly on the bottom of the baking dish. Spread the oat mixture evenly over the berries. Bake for 35 minutes, until the edges are golden brown.
