Oatmeal Raisin Cookie Baked Oatmeal
Oatmeal raisin cookie baked oatmeal is a great make-ahead breakfast you can bake on the weekend and enjoy all week long. If you like oatmeal raisin cookies, you must try this!
- 2.5 cups old-fashioned rolled oats
- 2 eggs
- 1.5 cups unsweetened almond milk
- 1/2 cup raisins
- 1/2 cup brown sugar
- 2 tablespoons avocado oil (can also use coconut oil)
- 2 tsps cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
Preheat the oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray.
In a large bowl, whisk together the eggs, almond milk, vanilla extract, and oil.
Add the oats, brown sugar, raisins, cinnamon, baking powder, and salt to the wet ingredients and mix until combined.
Pour the batter into the baking dish and bake for 35 minutes, until the edges are golden brown.
